    I am so full of energy recently. I have been drawn to healthy, green foods in particular, and I put it down to my slowly introducing fruits, and then vegetables into my terrible diet Resurge.

    Spinach, sugar snap beans and string beans all look amazing on my plate, and I find myself choosing them at lunchtime when I’m at work, over my old preferences of roast dinners and pies.

    One thing that certainly helps is that I am constantly stocking my fridge with lots of healthy fruit and vegetables: blueberries, strawberries, asparagus, spinach, beans, and when dinner time comes, it is so easy to steam them and quickly cook a protein like salmon or chicken. I’ll often make two trips to the supermarket within a week. The trick is not to let yourself run dry and keep things prepared and accessible. You don’t want an empty fridge when you’r tummy is rumbling, because that’s when the take-away menus come out, and you don’t want ingredients that need love and care to get them in a cookable state (well at least an impatient person like me doesn’t).

    Also, I keep my fruit bowl full. I can’t tell you how many bananas I go through in a week. My staples are apples and bananas, and then when I’m doing a big weekly shop, I ‘treat’ myself to whatever is in season, or looks colourful and delicious that day. Make yourself excited to select healthy things for yourself.

    In terms of snacking, I keep sunflower seeds and pumpkin seeds in my desk drawer at work. I don’t have them at home, because I figure that I get all the nutrients I need from the servings I have five days a week at work.
